1/18/2024 3 Days to Wellness: Healthy Meal Plan
We're officially 3 weeks into 2024, so this feels like the perfect time for a little reset to kickstart some healthy habits this year. If you're anything like me, it takes a couple weeks to get settled into the New Year -- the holiday festivities and celebrations continue into January and then it gets to a point where I'm just ready for some routine and healthy meals at home. Which brings me to this healthy 3-day meal plan! I put together a meal plan for you, packed full of healthy and delicious recipes that will leave you feeling full and satisfied and with plenty of energy to tackle your busy days.
When it comes to sticking with a healthy eating routine, it has to be realistic, easy, and most importantly, delicious, otherwise it won't last! If a recipe has a ton of ingredients or a million steps, there's no way I'll even try to make it. Most of my recipes are 30 minutes or less with minimal ingredient lists that truly anyone can make. If any diet is too restrictive or doesn't leave room for dessert, forget it! My sweet tooth needs something every day, which is why you'll always see treats worked into my meal plans.

DAY 1
Breakfast: Banana Chia Overnight Oats: prep these the day before for a super easy grab-and-go breakfast! Lunch: Turkey Cobb Salad Snack: Lemon Poppyseed Protein Bites Dinner: Gluten-Free Lasagna Soup Treat: Peppermint Hot Chocolate DAY 2 Breakfast: Snickerdoodle Smoothie Lunch: Southwestern Chicken Quinoa Lettuce Wraps Snack: 2 hard-boiled eggs + avocado + everything bagel seasoning Dinner: Paleo Orange Chicken & Broccoli Treat: 2-4 squares Hu Kitchen chocolate bar DAY 3 Breakfast: Breakfast Quesadilla Lunch: California Chicken Salad Snack: berries + a handful of nuts Dinner: Sheet-Pan Lemon Garlic Salmon & Veggies Treat: 1-2 Paleo Chocolate Chip Cookies
