4/29/2022 Breakfast QuesadillasI almost skipped out on posting this recipe on the blog because it felt like it might be too simple, but honestly, those recipes are always the best! Who doesn't love a meal that comes together in a matter of minutes with just a few ingredients!? I lived on breakfast quesadillas while I was pregnant and they're still something I crave all the time. You can easily customize them by adding your favorite veggies inside, changing up your tortillas (I always use Siete almond flour tortillas), and using whatever cheese you prefer. However you whip it up, you can't go wrong! While there's no wrong way to make a breakfast quesadilla, I have found a method that makes things come together even more quickly. I used to scramble the eggs and veggies, put them on a separate plate, then add the tortilla and put the eggs back on, but my new and improved method is to just add the tortilla right on top of the eggs, let it set for about 30 seconds or so, then flip. Less dishes and steps! Ingredients 2 eggs, whisked 2 slices nitrate-free turkey bacon, chopped 1 handful spinach ⅓ cup shredded Mexican cheese 1 tbsp extra virgin olive oil 1 tortilla (I use Siete Foods almond flour tortillas) Sliced avocado or guacamole Chives for garnish, chopped
