10/5/2019 Sheet-Pan Citrus Salmon & BroccoletteWhen it comes to a quick & easy dinner, you really can't beat a sheet-pan meal where you throw everything together on one pan, add some flavor and seasoning, toss it in the oven, and 15 minutes later, dinner is served! Sheet-pan meals work perfectly with fish and veggies, so this usually ends up being my go-to Sunday or Monday night dinner when I'm craving something fresh, healthy, and flavorful after the weekend and don't want to spend all night in the kitchen. Not only is the prep and a breeze, but so is the cleanup! Ideal! When it comes to a healthy and delicious sheet-pan dinner, my favorite combo is definitely salmon and baby broccoli, AKA broccolette. The two pair so well together typically cook to perfection right at the same time, so it works out really well! Let's talk about the ingredients for a second. The ingredients in this recipe are pretty simple, so it's really important to focus on quality to really let them shine. For fish, if you're able to use wild-caught, that will always be your best bet. Farm-raised fish is typically higher in contaminants, chemicals, and antibiotics that are fed to the fish, whereas wild fish, which are eating their natural diet, will have extra health benefits like higher omega-3 fats than farm-raised. For veggies, I'm a big proponent of going organic whenever possible, and one of my favorite organic brands is Earthbound Farm. Their organic broccolette (btw, don't you love that they call it broccolette... it feels very dainty and French!) is absolutely perfect in this recipe! For cooking oil, I use avocado oil here because we'll be cooking this recipe at high heat and then broiling it, and avocado oil has a much higher smoke point than olive oil, so it's definitely our best option! Now for the recipe! You'll start with a sheet-pan lined with parchment paper for easy clean-up. Then you'll add your salmon on there and arrange the broccolette either around it, or you can do fish on one side and broccolette on the other side of the pan. We'll brush the salmon with a mixture of avocado oil, lemon juice, orange and lemon zest, garlic, and salt and pepper. We'll toss the broccolette with avocado oil or just use avo oil spray (so much faster and easier to coat it evenly) and season with salt and pepper. It should look just like this... And then all you have to do is add some beautiful lemon and orange slices and some fresh dill and bake it until it's ready to go! So easy!! The combination of flavors is so refreshing, light, and delicious. Roasted salmon and broccolette is honestly super yummy even when you just drizzle it with oil and season it with salt and pepper, but when you add the garlic, citrus, and dill, it really brings it to the next level! You'll love it! Once it's all roasted and ready, it will look something like this... yum! Ingredients 3 fillets of wild salmon (tip: ask for center-cut fillets so they cook evenly) 2 bunches Earthbound Farm organic broccolette, stems trimmed 1 tbsp avocado oil 2 lemons 1 orange 2 garlic cloves, minced 1 bunch fresh dill Salt and pepper to taste Serves 3.
