11/29/2015 Persimmon Power SaladIt's almost been a week and I think I'm still full from Thanksgiving. Anyone with me? I may have set the stuffing-eating-record but I'm blaming that on the fact that I made two separate stuffings - one Italian stuffing with Parmesan and chicken sausage and one cornbread cranberry stuffing with lots of veggies - and I had to do a ton of taste-testing throughout the process! Neither were healthy, both were delicious. (You may have seen a peek of these stuffings on snapchat - I finally signed up and you can follow along with me @lindsaysurowitz!) I think I speak for many of us when I say it's time for a seriously healthy detox! Over the next few weeks, I'll be drinking tons of green juices and smoothies, giant salads, fruits and veggies, and the occasional cookie here and there. Speaking of giant salads, this Persimmon Power Salad is so delicious, filling, healthy, and packed with superfoods. You're going to LOVE it. Ingredients 2 large handfuls of spinach 2 large handfuls of spring mix lettuce 2 Fuyu persimmons, quartered, then sliced 1 cup (cooked) quinoa 1 avocado - cubed 1/4 head red cabbage - chopped 1/4 cup pumpkin seeds 1/3 cup pomegranate seeds 1/4 cup chopped pecans 2 tbsp dried cranberries (unsweetened) Optional: sprinkle of feta cheese Dressing: 2 tbsp extra virgin olive oil 2 tsp balsamic vinegar 1 clove garlic - finely chopped 1/2 tbsp honey Salt & pepper to taste Serves 4-6 Mix all ingredients in a large bowl. Toss with dressing. Devour! I made this salad for a Thanksgiving potluck at work and it was a big hit. It has so many delicious and colorful Fall ingredients that you must take advantage of this season! If you haven't made anything with Persimmons yet, go get some ASAP from your Farmer's Market and throw them in your salads or smoothies! Make sure to get fuyu persimmons because they're much sweeter than hachiya persimmons. I can't get enough!
