1/24/2013 Mediterranean Cucumber Tomato SaladThis salad is the ultimate in freshness, flavor, and convenience! AND it combines almost all of my favorite ingredients. Yesterday was one of those days when I just neeeeeded my chocolate bar (and cookies) at 3pm, and when I came home that night, I felt icky and all I wanted was something super healthy and refreshing. My Mediterranean Salad with a lemon-shallot dressing was just the ticket! Ingredients
2 Persian cucumbers - chopped 1 1/2 cups cherry tomatoes - halved 1 can garbanzo beans 1 handful of toasted pine nuts 1 1/2 tbsp fresh mint - finely minced 1/4 cup italian flat-leaf parsley - finely minced Dressing: 1 shallot - chopped Juice of 1/2 lemon 2 tbsp extra virgin olive oil 1/2 tsp salt Serves 3. If you're a cheese lover, add goat or feta!
