This salad is the ultimate in freshness, flavor, and convenience! AND it combines almost all of my favorite ingredients. Yesterday was one of those days when I just neeeeeded my chocolate bar (and cookies) at 3pm, and when I came home that night, I felt icky and all I wanted was something super healthy and refreshing. My Mediterranean Salad with a lemon-shallot dressing was just the ticket!
2 Persian cucumbers - chopped
1 1/2 cups cherry tomatoes - halved
1 can garbanzo beans
1 handful of toasted pine nuts
1 1/2 tbsp fresh mint - finely minced
1/4 cup italian flat-leaf parsley - finely minced
1 shallot - chopped
Juice of 1/2 lemon
2 tbsp extra virgin olive oil
1/2 tsp salt
If you're a cheese lover, add goat or feta!
