4/16/2013 Chinese Chicken SaladI know my last post was all about tricks to stay healthy on vacation, but I'll admit that over the last several days in Palm Desert, I indulged in some delicious music festival food. And you know what, I totally enjoyed every single bite of that pizza, gyro, taco, etc . . . especially after walking nearly 8 miles in a day (according to my handy Fitbit)!! But you know what, it's Tuesday and it's time to get back on the healthy horse! As soon as I got home yesterday, I was dying for something super light and refreshing. This crunchy, citrusy, protein-packed salad was exactly what I was craving! Here's what you need to make this dynamic salad . . . Ingredients 2 cups cole slaw mix (or shredded green cabbage with shredded carrots) 1/2 cup edamame beans 3/4 cup sugar snap peas - cut in half 2 tbsp slivered almonds 1/4 cup green onions - chopped 1 chicken breast - sliced 1 orange - segmented 1 tsp sesame seeds Salt & pepper Optional: crispy wontons & avocado Dressing 1 tsp extra virgin olive oil 1/2 tsp toasted sesame oil 1/2 tsp rice vinegar 1 squeeze of lime juice 1/2 tbsp honey Salt & pepper to taste Serves 1 - 2. So simple! Just mix all ingredients together, add the dressing, and serve!
I love this salad because it is PACKED with nutrients - you get tons of protein from the chicken, fiber and Vitamin K from the green cabbage (Vit K enhances bone health and brain function, yay!), healthy fats from the edamame, and Vitamin C from the juicy orange segments! And the best part is that it only takes a couple minutes to throw together, so no excuses - whip it up and enjoy this healthy and delish meal!

Super excited to try this. One question how did you peel your orange? You don't have any of the white pith on it before you segment it.

Abby! Use a sharp paring knife to cut the peel from the orange (the pith is removed in the cutting/peeling process), then segment it along the white lines!

I finally made this today. I didn't have any edamame but it still turned out good. I can't wait to try it again.
