2/21/2013 Turkey Meatball SoupSometimes the simplest meals just can't be beat. How GOOD is a classic PB & J sandwich? Or scrambled eggs with toast? Well I'm adding a new simple favorite to the list, and it's my BFF Lauren's Turkey Meatball Soup. There are only a couple ingredients in this soup, and ever since she made this for me a couple years ago, it's become one of my go-to WeekNight Bites. This is a total comfort soup, so easy to throw together, and perfect for these cold & rainy days we've been having! If you've never had Trader Joe's frozen turkey meatballs, I suggest you go grab a bag or two stat! These are so tasty and easy to incorporate in tons of meals for extra protein. Definitely a staple in my freezer!

12/25/2012 White Bean Chicken ChiliHappy holidays friends! Has this holiday season been a cold one, or what!? All I want to do these days is light the fireplace, curl up on the couch, watch all my favorite guilty-pleasure shows, and eat THIS SOUP! Good news is this is the easiest soup recipe ever. Run to your Trader Joe's and get all of the ingredients, throw it all in one pot, warm it up and enjoy! To make it super easy and quick, you can even pick up a rotisserie chicken and shred it into bite-sized pieces, rather than cooking the chicken yourself. It's kind of a chili, sort of a chowder, and an all-around (healthy!) comfort food. Ingredients
1 box Trader Joe's Creamy Corn & Roasted Pepper Soup Shredded chicken breasts - either pre-cooked rotisserie chicken or boiled chicken breasts (I used 4) 2 cans Trader Joe's White Kidney Beans (Cannellini Beans) - rinsed and drained 1/2 cup Trader Joe's Organic frozen roasted corn 1/2 jar Trader Joe's Salsa Verde (or full jar for more spice) 1 tbsp extra virgin olive oil 1/4 cup Trader Joe's diced onions 2 cubes Trader Joe's frozen crushed garlic Fresh green onions and cilantro for garnish Avocado to serve on top Salt & pepper to taste Serves 4-ish - share with friends, eat it throughout the week, or freeze it for another time! 1. Heat olive oil in a pot, then add diced onions and saute. Add the garlic cubes (or 2 chopped cloves) and saute together until fragrant. 2. Add entire box of soup and let it heat through. Once it starts to warm up, add chicken, salsa verde, and corn. 3. Add cannellini beans and stir. Season with salt and pepper to taste. 4. Reduce heat to low, cover, and allow soup to simmer. 5. Once heated through, just serve soup and garnish with green onions, cilantro, and avocado. ENJOY! |
