10/16/2013 Roasted Butternut Squash, Kale & Farro SaladWe're in the full swing of Fall, and I can't think of a better way to celebrate the season than this flavorful, hearty farro salad. It's bursting with color, healthy ingredients, and so much deliciousness. There's so many flavors in each bite - roasted butternut squash, sauteed kale and shallots, dried cranberries, toasted hazelnuts, fresh thyme, nutty farro, and a citrusy and sweet orange vinaigrette dressing. YUM! Let's just talk about some of these power foods for a second . . . butternut squash is a total stud of a squash. It's packed with antioxidants and Vitamin A, it's high in fiber, low in fat, provides half your daily dose of Vitamin C in just 1 cup, and even protects against heart disease. For more on this beautiful squash, read this. How about farro? For those of you who haven't tried it, be prepared to fall in love with this nutty, hearty grain. It's a slow-digesting complex carb that's high in fiber and will keep you full and your energy level high. And of course kale . . . it doesn't get much healthier than this antioxidant-rich "Queen of Greens". So yes, this salad is super healthy, but what's better is that it's ridiculously yummy too! It is the perfect side dish (maybe with your Thanksgiving turkey!) and is equally delish the next day served cold. You ready for this Fall salad? Here we go . . .

6/25/2013 Citrus Ahi Appetizer - Two WaysYou may notice that in today's video, I upgraded to a much bigger, whiter, and nicer kitchen. I was home in San Diego over the weekend for a friend's wedding and had the pleasure of cooking in my parents beautiful kitchen, and the best part was finally snagging my mom as a WNB guest star! It was a total family affair - mom and I cooking, boyfriend filming, dog barking in the backyard, brother dancing in the background to make us laugh, sister and dad wanting to taste it before the still shots had been taken . . . it was not my typical WNB filming experience and I loved every minute!
My mom learned this recipe at a cooking class in San Francisco and when I heard about it, I knew it was the perfect summer appetizer for WNB. It's light, healthy, citrusy, fresh, and of course delicious. And it can be served in cute little spoons which makes for a lovely display and a quick one-bite, or on top of an arugula & asparagus salad. Even though it's a super easy recipe to prepare, it's looks really impressive and no one will know that it only took you a few minutes to make . . . our little secret! ;-) 6/11/2013 Mexican Steak Salad w/ a Cilantro Avocado Dressing - perfect for Father's Day! Now that I’ve been frolicking through Europe for 5 weeks, there are certain things that I am really starting to miss from home. Don’t get me wrong, this has been an incredible trip and I’ve absolutely loved my adventures in each and every one of these beautiful cities, but there are little everyday things (and people, of course!) at home that I’m looking forward to getting back to next week. What I miss the most is predictable – my family, my love, and my friends. Second to those wonderful people, one thing I’m very excited for back at home is some delicious Mexican food! What I wouldn’t give for some perfectly made guacamole right now! This recipe is coming to you at the perfect time . . . Father’s Day is right around the corner and this Mexican meal is one that I know my dear Dad (and yours!) will love! I’m planning on making this for the fam as soon as we are all reunited for a belated Father’s Day celebration.
This salad is not an average plain Jane salad – it’s super hearty and packed with flavor. It’s filled with colorful veggies, black beans, sweet corn, and topped with a juicy steak and a zesty, creamy, avocado-cilantro-lime dressing. YUM! It’s officially summer, so it’s the perfect time to get grilling (or to dust off your grill pan) and whip up this delicious, fiesta-worthy salad! And if you feel like making some extra dressing, (which I definitely recommend!) it's amazing served as a dip with chips or veggies! 4/16/2013 Chinese Chicken SaladI know my last post was all about tricks to stay healthy on vacation, but I'll admit that over the last several days in Palm Desert, I indulged in some delicious music festival food. And you know what, I totally enjoyed every single bite of that pizza, gyro, taco, etc . . . especially after walking nearly 8 miles in a day (according to my handy Fitbit)!! But you know what, it's Tuesday and it's time to get back on the healthy horse! As soon as I got home yesterday, I was dying for something super light and refreshing. This crunchy, citrusy, protein-packed salad was exactly what I was craving!
3/26/2013 Arugula Blackberry SaladSpring has officially sprung, so what better time than now for this delightful, refreshing, and fruity salad!? I have always been a fan of salads with berries and nuts, so I wanted to make a quick and simple WNB salad that combines several of my favorite ingredients.
This is a perfect salad for a ladies lunch or would be great as a side salad with a light fish, chicken, or steak main dish. The dressing is super easy, and so darn flavorful, you might as well just make a bunch of the dressing at once and keep it in a bottle in the fridge for later! |
