2/24/2021 Homemade Cashew MilkI've thought about putting my Homemade Cashew Milk on the blog for a while now, but I almost wondered if it was too simple to share on here. I mean can you call it a recipe when there's only 4 ingredients and all you have to do is blend it!? Then I realized, yes, yes you can, and who doesn't love an easy peasy 1-step recipe, especially when it tastes this delicious!? I'm a huge fan of making nut milk at home because 1, it tastes way better (I swear this is like a healthy milkshake!), and 2, you don't have to worry about any weird thickeners or additives in it like you do with so many store-bought options. Of all the nut milks, cashew is my favorite, not just from a taste perspective, but also because you don't have to soak or strain the nuts, so it literally comes together within 2 minutes! Let's make it shall we!?

1/25/2021 Almond Butter Cups with Sea Salt (Vegan, GF, & Paleo)Anyone who knows me, knows my love for sweets. I mean just take a look at the Desserts section of my recipe box - it's 2 or 3 times longer than any other recipe category. I truly LOVE desserts. They bring so much happiness to my life, and my day just feels incomplete without a little something sweet. But I also realize that eating a whole bunch of sugar every day isn't ideal for our health, so my strategy has always been to create healthy modifications to my favorite treats. That way, we never feel deprived, and we can satisfy our sweet tooth without the sugar crash!

I can't believe we're officially into the first week of 2021. 2020 was... quite a year and I know I can't just be speaking for myself when I say it will be nice to push the reset button and make the most of the brand new year. Maybe that means something different for each of us. It could mean resetting and and prioritizing our exercise, or making healthier eating choices, or getting to bed earlier, or taking care of our mental health. While I love the idea of setting resolutions for our health, sometimes they start really strong but get tossed out the window by February, so I prefer to focus on small goals and habits that I can realistically check off each day that will add up and really make me feel my best.
