2/12/2013 Blueberry Apple Cobbler - A Healthy Sweet for your SweetieValentine's Day is a great excuse to eat lots of chocolate. We're surrounded by heart shaped boxes of See's candies, special restaurant menus featuring molten lava cakes (YUM), and deliveries of pretty chocolate covered strawberries. But, what is a girl to do when her valentine isn't such a chocolate lover!? I did some serious brainstorming on this one, and was determined to make a fabulous dessert that is healthy, light, and still delicious enough to satisfy my very judgmental sweet-tooth! After researching nearly every recipe out there for crumbles, crisps, and cobblers, I came up with my healthy and delicious Blueberry Apple Cobbler. This dessert certainly doesn't taste healthy . . . it's sweet, gooey, crunchy on top, and just melts in your mouth! And it totally passes the boyfriend taste test! So go ahead and indulge in this sweet with your sweetie, without an ounce of guilt! Ingredients 4 Granny Smith apples - peeled and cubed 2 cups fresh blueberries 1/4 cup orange juice 1/4 cup brown sugar 1 tbsp vanilla 1 tsp cinnamon For the topping: 1 cup old fashioned oats 1/4 cup brown sugar 1 tbsp cinnamon 1 tbsp vanilla 3 tbsp melted butter 2 tbsp whole wheat flour To make this Gluten-Free, substitute the whole-wheat flour and oats for certified g-free flour and oats! Bake at 350 for 40 minutes or as long as it takes until the topping is browned and you can see the fruit juices in the bottom half of the crumble! Serves 6. Serve with a dollop of Cool Whip, frozen yogurt, or ice cream! Wishing you lots of love on Valentine's Day! Enjoy!
