We had a less-healthy version of this on our vacation and I knew I had to come home and recreate it my way with a little less sugar, and I have to say, it was a hit! You can use any nut butter you'd like, spread it on your bread, roll it up with a banana, and then make it the way you'd typically make french toast. 3 eggs 1/3 cup unsweetened nut milk 1 tsp vanilla extract 1/2 tsp cinnamon 5-6 pieces of bread (I used organic sprouted wheat bread, gf bread should work too) 2 bananas Almond butter 2 tbsp coconut oil Maple syrup for serving
