1/21/2019 Avocado "Fries"Super Bowl is right around the corner! For some, that means a great day full of football. For me, it’s all about the food and the halftime show, but really, it’s about the food. It can be tough to find healthy options at a Super Bowl party since everything on the table tends to be salty, fried, cheesy, saucy, or carby. I’m a huge fan of bringing your own healthy dish to any party… that way you know there will always be something there for you and you won’t have to grab for the nachos out of hungry desperation or because there weren't any other options. Ideally, you want to bring something that’s healthy but delicious enough to satisfy the crowd, and it has to be easy to eat so people can dig in as they watch the game. These Avocado “Fries” do all of the above! They’re a fun finger-food, something a little different and exciting, and they’re really easy to make! Avocados are definitely on my top 5 favorite foods list. I add them to just about every recipe I possibly can and probably eat one every day. The fats in avocado are so important for our metabolism as they keep us full and satiated, help regulate blood sugar, and they also help promote hormone production and balance. The days of fearing the fat are long gone (finally!), and now we can fully embrace the buttery goodness of avocados knowing that it's one of the healthiest foods we can eat - full of those good fats, antioxidants, nutrients like Vitamin K, Folate, Vitamin C, and potassium, and it's also a great source of fiber. A true superfood! So when Mission Avocados reached out about using their avocados (or as they call them Emeralds in the Rough), I was all in and so excited to use their avocados not just as a topping or a dip, but as the star of a recipe! You may wonder why they’re called Emeralds in the Rough… well, these avocados may not be the most flawless ones you’ve ever seen on the outside - maybe they’re a little small, marred, or asymmetrical - but they’re perfectly delicious on the inside, which is what really matters! I love this whole message about inner beauty and looking beyond the exterior, so I was extra excited to put these beautifully imperfect avocados to good use! Turning avocados into “fries” is actually pretty easy. You just cut the avocado into slices. Dip it in a whisked egg, and then dip it in the “breading” which is made of almond flour, shredded coconut, salt, pepper, and paprika. Simple! Once they’re coated in this mixture, you just cook them in avocado oil until they’re golden, hit them with some salt when they’re still hot, and serve them right away with your favorite dips! Simple, right!? Ingredients 4 avocados, just barely ripe (you want them to have a little give, but not be totally ripe and soft) 1 egg ½ cup almond flour ¼ cup finely shredded coconut 1 tsp paprika ½ tsp salt
