12/18/2013 Apple Cinnamon GaletteIt's WeekNight Bite - Holiday Edition today, and you're going to love this delicious, warm, and cozy Apple Cinnamon Galette. A galette is a rustic french tart . . . keyword "rustic". I love finding recipes that are supposed to have a rustic look, which basically means to me that it's totally freeform and hard to mess up! You can make it look any way you want, and it will never be questioned because it's homemade and "rustic"! Anyway, this tart is beyond yummy. I learned how to make a galette at The New School of Cooking and just fell in love with the whole process. We made galettes with all different fruits - peach, strawberry, and apple - and they were all amazing, but the apple one just screamed HOLIDAYS to me. I'm envisioning making this in a snowy cabin somewhere, sitting by a fireplace, and diving into my apple galette with fresh whipped cream, while listening to Mariah Carey holiday music. Doesn't that sound SO lovely? Wellll, it's about 80° in LA today, no snow, and I have a fake fireplace, but I do have Mariah ready to go, and I do have my apple galette, so that's good enough for me!
Making the homemade crust was very exciting for me because 1, you only need 4 ingredients, 2, it's super easy and I'm no longer intimidated by it, and 3, this crust recipe can be used for pies, galettes, and quiches! You're learning some serious life skills today on WeekNight Bite! I admit we're working with some serious butter here, but everyone out there should know how to make a homemade crust, and when it's done, you can split the galette with 5 friends and not even worry about it! 8/27/2013 Skinny FroYo & Cookie DoughYou know what's really weird? Today is NATIONAL BANANA LOVER'S DAY. First of all, I didn't even know that this national holiday existed (but I'm excited that it does!), and secondly, I just happened to edit my banana froyo & cookie dough post for TODAY - is that bizarre or what? It must be fate! While checking out the national food calender, I also learned that it is officially "National Eat Dessert First Month", so this recipe is coming at you at the perfect time! This is a treat that you definitely can eat FIRST, and it would be totally healthy, acceptable, and WeekNight Bite-approved. I used to be a total frozen yogurt addict . . . I'd go several times a week, and I really looked forward to it because it was like social hour with all of my girlfriends. Sadly, the joy that I had during my Yogurtland outings was quickly replaced by a major stomach ache afterwards, every time. I finally decided that I had to give it up . . . first of all, dairy has never been my best friend, and secondly, fro-yo is so processed and full of fake sugars and chemicals . . . yuck! Since giving it up, I have really missed this sweet, summery treat, and I'm so excited that I finally have a healthy, natural, and equally delicious replacement for it!
My friend Abby (also seen here and here) from SAYiWON'T FiT taught me about the magic that happens when you blend (and blend and blend) frozen bananas. It turns into frozen yogurt/ice cream consistency! We added cacao nibs, which are high in antioxidants, vitamins, minerals, and fiber, and also added almond butter, and dates - and these 4 ingredients are all that it takes to make this delicious fro-yo! Of course, with frozen yogurt, ya gotta have some toppings! Am I right or am I right!? Cookie dough has always been my favorite, so we gave my dainty food processor another workout and whipped up our healthy, clean version of cookie dough. This is officially my new favorite treat! 7/23/2013 Guilt-Free Sweet: Baked ApplesApple pie is one of one of those foods that just makes me feel nostalgic and happy. Probably because I always have it on Thanksgiving, my favorite holiday, and one bite brings me back to all the years of celebrating with my fam. Well, because I try not to make the my Thanksgiving indulgences a daily habit (especially in the middle of summer!), I tried to come up with a dessert that would satisfy my apple pie craving in a fabulously guilt-free way. And it's not in the form of a pie, but in a baked apple, stuffed with sweetness from dried figs, honey, vanilla, and my favorite spices, and a satisfying crunch from walnuts and rolled oats. Finish these babies off with a dollop of whipped topping, or my latest and greatest favorite, HaloTop's healthy ice cream! . . . Oddly enough, I'm actually eating a scoop of their Lemon Cake flavor as a blog to you, and the childlike happiness that I experience when I eat a bowl of ice cream is multiplied by the satisfaction of knowing how healthy each delicious bite is for me (low sugar, high protein, and only 70 cals)! Love! Anyway back to my baked apples - this sweet treat will definitely cure your autumn apple pie craving in a super light, fresh, and summery way! Here's what you need to whip these cuties up . . .

Cool! 3/8/2013 Secret Ingredient Chocolate Chip BlondiesYou guys will NOT believe what ingredient I used to make Chocolate Chip Blondie Bars last night. BEANS! Yes I realize it sounds weird, but once they are ground up in a food processor, white kidney beans, AKA cannellini beans, have the perfect smooth consistency for baking. Their beany taste is also magically masked when you add in the other ingredients. I've been seeing tons of recipes lately for healthy desserts using beans. Black bean brownies, garbanzo bean cookies, white bean cookie dough "dip" . . . I really got inspired to experiment with this secret ingredient! I found these blondies on one of my favorite blogs, Chocolate Covered Katie.
It's a goood feeling to eat a dessert that tastes delicious but is also packed with protein, fiber, and healthy omega-3s. While eating the blondies, I felt like giving myself a pat on the back! |
