Sometimes it's hard to stay healthy on the 4th with all the BBQs and the oh-so-tempting patriotic desserts, but this recipe has got you totally covered and will keep you feeling light and healthy while strutting your bikini bod on the beach all weekend.
You'll LOVE this Coconut Vanilla Chia Pudding. It's sweetened with stevia, packed with protein, and topped off with antioxidant-rich berries. My favorite ingredient is the fresh vanilla bean - it is just magical and gives the pudding a gourmet twist, and makes me feel a little fancy every time I use it in a recipe! The combo of the vanilla bean and coconut flavor is so scrumptious and sweet. If you love coconut, you'll be in heaven with the parfaits - they taste like summertime! And nothing tastes better than summer right? If you're hosting a brunch on the 4th or if you want to serve some guilt-free desserts, this is the perfect recipe for you. I ate it for breakfast today and it was perfectly filling and satisfying. What's extra fab about this recipe is that it literally takes 5 minutes to prepare, then you just put it in the fridge, go run some errands, workout, do something productive, and come back and your pudding is ready to go. Another option is to pop it in the fridge overnight and you don't even have to think about it. Then you can assemble it into fruit parfaits whenever you feel like it.

6/18/2014 Super BarsLarabars are my go-to snacks to help get me through the 3pm lull at work. What I love about them is their simplicity - just 3 or 4 natural ingredients, nothing fake, nothing I can't pronounce. It's the perfect little pick me up, but I've been getting tired of stocking up on them every single week and spending way too much on these little 3-ingredient bars. I figured, since they're so simple and I always have the ingredients on hand, I'm going to be domestic and cost-efficient and make my own Larabars. Then when I started making them, I kept adding more and more ingredients to my mini food processor, and the result was a thousand times better than even my favorite Chocolate Chip Cookie Dough Larabar. I threw in a bunch of superfoods and added some cinnamon and salt for my favorite salty-sweet combo, taste tested-along the way, and came up with none other than the Super Bar. It's absolutely delicious right out of the fridge and has the perfect consistency - a little bit soft and a little bit crunchy from the nuts and cacao nibs. And it's packed with healthy ingredients and tons of satisfying flavors. I think I can confidently say that I'm going to ditch the Larabars and make a big batch of Super Bars every week to get me through my work days with extra pep and energy. I started out with some of my favorite healthy ingredients - almonds, dates, chia seeds, and cacao nibs. I pulsed up the almonds in the food processor first, and then added the rest of my ingredients. The honey was a great touch for a little sweetness. Followed by a big spoonful of Justin's Honey Almond Butter. MY OBSESSION. Next came some salt and cinnamon, then a quick (and loud) run through the food processor, and the result was this.
5/28/2014 Clean-Out-The-Fridge Breakfast CasseroleAside from dessert, breakfast is by far my favorite meal of the day. Your breakfast can either start your day off on the perfect track, or set the tone for an overly indulgent or unhealthy day. I usually have a green smoothie in the morning as I'm running out the door to work, but by 10:30ish, I'm hungry again and ready for a delicious snack. And that's when I'm faced with some tough choices - there's the freshly baked coffee cake calling my name from across the cubicle, the ridiculously yummy pastries someone brought in from Porto's Bakery (sighhh), OR the healthy snacks I packed in my new, cute lunchbox. Now, normally the baked goods would be way too tempting, but when my healthy snack is as satisfying as today's Clean-Out-The-Fridge Breakfast Casserole, the decision is pretty easy! The key to staying on a healthy track and avoiding the naughty pastries in the office is to do some simple meal prep early in the week and set yourself up to make great food choices. One of my go-to recipes to make on my Meal Prep Day is this casserole. It only takes a few minutes to prepare and it makes breakfast for the whole work-week. It's also a great way to use up a ton of your ingredients in the fridge - you can literally throw any veggies and herbs in here and it will be absolutely delish! This is what I used in my breakfast casserole. I had leftover black beans and green onions from taco night, 2 slices of cheese, not enough spinach for a salad, a couple slices of turkey bacon, and a few tomatoes. This was all I needed and it was just perfect for my casserole. There's really no need to measure here, just chop up those veggies and throw em in. . . .the more colorful, the better. Ingredients
8 eggs 1/4 cup almond milk 1/4 cup water 1 cup cherry tomatoes - cut in half 1/2 cup black beans - rinsed and drained 3 green onions - chopped 1/4 cup shredded cheese 1 avocado - cubed 3 slices turkey bacon - diced 1 cup raw spinach - chopped 1/2 tsp salt 1/2 tsp pepper 1 tsp dill (fresh or dried) Serves 6-8
5/7/2014 Mother's Day BrunchingWhat on earth would we do without our moms? I've been feeling terribly sick all week, and even at 26 (and-a-half) years old when my fiancé was asking me what I needed or what he could get me, all I could think of was "I need my mom!" Without even asking her, my mom just knew, and within 2 hours she was out of San Diego and at my door, soup-in-hand, ready to take care of me. There's just nothing better. For all they do for us, we need to spoil them big time - every day, but especially this Sunday for Mother's Day. Brunch is my absolute favorite meal. It's like an occasion all on it's own. There is so much deliciousness packed into the all-encompassing meal that is brunch - I like to start it off with tangerine mimosas, then have some breakfasty bites, then throw in a few fresh salads options, and end it with some sweets - now that's how to throw a brunch. I know, I know, it's corny, the flowers are quadruple the normal price, pre-set restaurant menus are lame and expensive, and it's really just a ridiculous holiday created by Hallmark. BUT... I still love it! Can't help it. While I refuse to go out to any stuffy restaurants and I'd much rather receive no-reason-flowers than Valentines flowers, I'm definitely not going to miss out on an excuse to make homemade Valentines with doilies, glitter, and stickers (in fact, my girlfriends are coming over tonight to do just that!) or to turn all my food into heart-shapes all day, starting with this Sweetheart French Toast!
