Sugar Spiced Salmon . . .
Sugar Spice Rub:
1/2 cup sugar
1 teaspoon dry mustard
1/4 teaspoon ground cinnamon
1/4 teaspoon paprika
2 teaspoons cocoa powder
1/2 cup chili powder
4 tablespoons ground cumin
1 tablespoon ground black pepper
3 tablespoons kosher salt
You'll also need: organic salmon filets & extra virgin olive oil
This will make enough rub for 8 - 10 salmon filets!
Mix together all Rub ingredients and store in an airtight tupperware. When you're ready to make the salmon, drizzle the filets with extra virgin olive oil, then rub the Sugar Spice mixture into the top of the filets. Bake in the oven at 400° for 15-20 minutes depending on the size of your
filets. Check them with a knife in the middle to see if the filets
are light and flaky. Be careful not to overcook!
