7/22/2020 3-Day Healthy Meal PlanI think we're on day 130ish of quarantine life by now, and I'm guessing I'm not the only one who has gotten out of my healthy eating routine over the last few months. Most days start pretty solid for me with a workout during Noah's naptime and typically a smoothie afterwards, but by the time I get Noah down for the night, and dinner rolls around, and I'm exhausted, the wine starts flowing and I'm finishing the day with some ice cream because "mama needs it!". I can't complain because it's definitely been fun and I always believe there's room to treat yourself, but I also know how great I feel when I'm on my game with my meals and when my treats are more mindfully thought out than that 3rd scoop of ice cream on a random Tuesday night before bed. Who's with me!? Typically, we'd be in the midst of my Summer Back to Basics Challenge, but since mom life has me like 🤪 these days, it may be a bit before the next challenge is up and running. In the meantime, I wanted to share a 3-day meal plan that will help inspire you to get in a routine with a bunch of delicious, healthy meals that will make you feel your best! A few notes: Breakfast: any of my smoothie recipes would be perfect here! Feel free to swap in your faves! I have a ton of ideas in my Smoothies story highlights on Instagram and in my eBook as well. Snacks: Typically, my breakfast keeps me satisfied until lunchtime, which is why I don't include a morning snack. If you're hungry though before you get around to lunch, a piece of fruit with a handful of nuts, chia pudding, some veggies with guacamole or hummus or Romesco Sauce, or hard boiled eggs are always a good call! Dinner: Keeping dinner light and fresh and full of vegetables and protein will make you feel fabulous when you wake up the next day! These meals come together super quickly with minimal clean-up and they're absolutely delish! Treat yourself: I have a little treat every single day! I'll never be the nutritionist that tells you sweets aren't allowed because they just bring me a lot of joy and I think they can be part of a healthy balanced life! Usually I'll go for a couple squares of Hu Kitchen chocolate with some tea, but I included some fun recipes in the meal plan that I love to keep on hand when the sweet tooth comes calling. You ready to give this meal plan a go?! Tag me when you try out the recipes at @weeknightbite and let me know how you're feeling after these 3 days of healthy eating!
