Apple & Cabbage Slaw with Sesame Lime Dressing

You guys ready for the easiest side dish ever? This Apple and Cabbage slaw comes together in about 5 minutes, and it’s honestly such a huge hit every single time I make it! It’s super flavorful, crunchy, and refreshing, and only requires a few simple ingredients! I created this recipe for My Domaine, when they asked me to share 7 low-carb side dishes, and since then, it’s become a total go-to in my dinner routine (and a major favorite among the ladies in the Weeknight Bite Challenges!)! I figured it would be the perfect thing to share for Memorial Day since it’s the ideal side for all of your grilling, and the most fuss-free, yet delicious dish to bring to any BBQ this weekend!

Ingredients
For the slaw:
1/2 red cabbage, sliced thinly
1 apple, sliced thinly
3 scallions, chopped
1/4 cup sunflower seeds
1 tbsp sesame seeds

For the ​Sesame Lime Dressing:
1 tbsp apple cider vinegar
2 tbsp coconut aminos
1 tsp sesame oil
Juice of 1/2 a lime
3 tbsp extra-virgin olive oil
Salt and pepper to taste

Serves 3-4

  1. Place sliced cabbage, apple, and scallions into a large bowl.
  2. In a small bowl, mix together dressing ingredients. Season with salt and pepper.
  3. Pour dressing over cabbage mixture, and toss well. Sprinkle sunflower seeds and sesame seeds over the top. Enjoy!

I told ya, done in 5 minutes flat! Doesn’t get much easier than that. And I know that slaw may not sound all that sexy or exciting, but let me tell you, this one’s got it all! The perfect crunch, some sweetness from the apple, and that umami flavor from the sesame. So good, I promise you’ll love it! Happy Memorial Day Weekend!
