7/28/2020 The Everyday SaladIt's about time I shared my Everyday Salad with you here. I make it over and over and over and realized I don't even have it on the blog! Whenever I'm whipping up a salad for lunch or dinner, it pretty much always has these ingredients in it. It's refreshing, has a good crunch, lots of vibrant ingredients and colors, and takes just a couple minutes to throw together. I'm all about a lot of texture in my salads and this really does the trick! It honestly doesn't require any measurements and you'd be perfectly fine just tossing in a handful of each ingredient but I did my best to give them to you anyway just in case you need 'em! It's definitely the House Salad in our kitchen and I hope it becomes a staple in your salad routine, too! The dressing is super simple in this salad - just a generous drizzle of good-quality olive oil, a squeeze of lemon, and cracked salt and pepper. This is really my go-to dressing most of the time. No need to dirty another bowl and mix up a fancy dressing for the Everyday Salad... this one adds plenty of brightness and freshness. Oh and just a little tip, don't skimp when you salt your salads - it really helps bring out the flavor! Feel free to serve this salad as is or pair it with any of your favorite proteins to make it extra filling. Ingredients 1 head of romaine, chopped 6 leaves of Tuscan or lacinato kale, stems removed and leaves chopped 1 apple, chopped 1 cup cherry tomatoes, halved 4 celery stalks, chopped 1/3 cup shredded carrots 1/4 cup pistachios 1 avocado, cubed 2 Persian cucumbers, chopped Dressing: A generous drizzle of extra virgin olive oil Juice from 1/2 lemon Salt & pepper to taste Serves 3-4
