Rainbow Fruit & Veggie Plates

If you want to get your kids to try out some new fruits & veggies, these Fruit & Veggie Rainbows are the perfect activity to do with them! Not only will this little project keep them super busy, but you’ll be shocked at how many fruits and veggies they’ll eat after assembling their rainbows. When I did this with Noah, he was so excited to try new vegetables that he hadn’t had before, and he loved dipping his veggies in ranch and hummus afterwards. Which obviously made mama very happy since he’s definitely entered the picky eating stage lately! Highly recommend giving this one a try with your littles at home! For the fruit rainbow:
-red: strawberries or raspberries
-orange: tangerine slices, cantaloupe, or peaches
-yellow: mango, pineapple, or banana
-green: grapes, apple, melon, or kiwi
-blue: blueberries
-purple: red grapes or blackberries
-for the “clouds”: sliced bananas or marshmallows for an extra treat

For the veggie rainbow:
-red: sliced cherry tomatoes, red bell pepper
-orange: carrots, sweet potato, orange bell pepper
-yellow: yellow bell pepper
-green: snap peas, cucumbers, celery, broccoli (I blanch the broccoli first), edamame
-blue: we couldn’t think of one but comment with any ideas!
-purple: purple carrots, roasted purple sweet potatoes
-for the “clouds”, we used cauliflower (blanched first) or small bowls with ranch

Assemble your rainbows! Start with red at the top arch of the plate and work your way down with each color. Have fun!
