4/30/2021 Pancake & Waffle BoardYou guys know I love a good snack board / cheese board situation… but how about a Pancake & Waffle Breakfast Board!? Don’t even get me started – it’s a brunch dream! This is so much fun to put together and even more fun to share with your friends! It’s loaded up with paleo pancakes & waffles and all the toppings your heart could dream of – berries, oranges, banana, whipped coconut cream, peanut butter, chocolate almond butter, maple syrup, chocolate chips… you get the idea, it's the ideal way for everyone to build their own perfect pancake and waffle stack! And with Mother's Day coming up on Sunday, this would be such a special way to spoil the amazing mamas in your life! You could always go totally homemade and whip up your pancakes and waffles from scratch for this board, but to make things easy, I used a box of Simple Mills pancake & waffle mix. It's made with simple ingredients like almond flour and coconut sugar, and all you have to do is follow the instructions on the back of the box and add oil (I use coconut oil or avocado oil), eggs, and unsweetened nut milk. I also like to add a sprinkle of cinnamon and a splash of vanilla for some extra flavor. You could use any waffle maker but this little heart-shaped one adds a fun touch and may be the best $13 I've spent in a while! As far as the rest of the board goes, just get creative and add any of your favorite pancake and waffle toppings! You literally can't go wrong and the more full and vibrant your board is, the better! Ingredients 1 1/2 cups Simple Mills Pancake & Waffle Mix 3 eggs 5 tbsp unsweetened nut milk 2 tbsp coconut or avocado oil 1/2 tbsp vanilla extract Sprinkle of cinnamon Yields 12 pancakes or waffles — follow the instructions on the back of the Simple Mills box if you want to make a different amount and it will tell you how to adjust! Toppings: Mixed berries Sliced bananas Sliced oranges Mini chocolate chips Whipped Coconut Cream (homemade recipe here) Pure maple syrup Peanut butter or almond butter Chocolate almond butter anything else your heart desires! Instructions: Grab a big board and start by placing your bowls that you'll use for the nut butters, maple syrup, chocolate chips, and whipped cream first. Then arrange your orange slices, pancakes, and waffles. Fill the rest of the space with berries and sliced bananas. Any bit of empty space, just throw some blueberries in there until it's all full!
