4/27/2018 Paleo Blueberry Banana Protein PancakesWhen I went to Expo West in March, I spent the day sampling every natural product you can imagine. By the end of the day, it was such a blur of almond butter, healthy granola, and protein bars that only a couple brands really stood out. One of them was Birch Benders, a company that makes pancake and waffle mixes with simple, healthy ingredients. Better believe I sampled all the pancakes and frozen toaster waffles (coming to stores soon!) that I could possibly get my hands on and was instantly hooked! Their paleo pancake mixes were especially up my alley, but if I had to pick just one, it would be the Banana Paleo mix. I love that it has a subtle banana flavor, it's high in fiber, low in sugar (sweetened with monk fruit!), and can literally be made with just the mix and water. But it's even more delicious with some juicy blueberries and vanilla protein added in! Here's all you need to whip up this epic stack! Ingredients 1 cup Birch Benders Paleo Banana Pancake Mix 2/3 cup unsweetened vanilla almond milk 2 scoops Primal Kitchen vanilla coconut collagen fuel (or one serving of your favorite vanilla protein) 1/3 cup blueberries Grass-fed butter or coconut oil for cooking Optional: banana slices for garnish and 100% maple syrup for dipping Makes 8 pancakes.
When it comes to enjoying maple syrup with your pancakes or waffles, my #1 tip is to always pour it into a small bowl for dipping, rather than pouring it all over the stack (although it does looks extra delicious when you pour it on for photos!).
