Hard boiled eggs are one of my favorite healthy snacks. They're a great source of protein, fat, vitamins and minerals, and just the perfect thing to keep stocked in your fridge when you need something quick and nutritious. Really the only problem I ever had with with hard boiled eggs was the fact that I could never get them quite right. Almost every time, they turned out overdone with chalky yolks that had that dreaded grey ring around them. Ugh! On the rare occasion that I timed them right, I still couldn't enjoy them because they'd be impossible to peel. And believe me, I tried every "trick" in the book. I tried adding vinegar to the water, I tried placing the eggs in cold water, then bringing them to a boil, I tried lowering them into boiling water instead, using older eggs, newer eggs, ice bath, no ice bath... I'm telling you, lots of failed hard boiled eggs. Then I discovered the ONLY way to make fail-proof hard boiled eggs. The Instant Pot!
Not only do the eggs peel like a DREAM when you cook them in the Instant Pot, but the yolks are always cooked to perfection. Never a grey ring in sight! I mean, check out these yolks! And do you see that egg shell? It came off in just two pieces. For a hard-boiled-egg-ruiner like me, this is the most satisfying thing ever!
Eggs (as many as you'd like and however many fit on the rack inside your instant pot)
1 cup water
*For softer yolks, set the timer for 3 or 4 minutes instead.
Eggs will keep well in the fridge for about a week.
Tell me those aren't the best hard boiled eggs on earth!? Oh and PS, I strongly recommend enjoying them with Trader Joe's Everything but the Bagel Seasoning. Yum!
