1/22/2013 Guilt-FREE Oatmeal Banana CookiesTHESE cookies are one of my absolute favorite go-to desserts, and if you can believe it, they're totally guilt-free and healthy! Don't you hate it when you're trying to eat well, so you decide to buy a sugar-free or low-cal "treat" and then it ends up tasting like cardboard (plus they're filled with random, unpronounceable ingredients)? UGH - the worst. Don't make that mistake again - make these super easy and satisfying cookies instead. These cookies are deceptively delicious - you'd never know how healthy they are! Even without any butter or added sugars, these cookies are sweet, soft, full of flavor, and yummy enough to cure any sweet craving out there. So next time you have ripe bananas, take a break from your usual banana bread and try out these Oatmeal Banana Cookies. I bet you already have all of the ingredients at home! Here's all you'll need to make it happen: Ingredients 2 RIPE bananas - mashed 1/2 cup creamy, natural almond butter 1 1/4 cup rolled oats 1/4 cup steel-cut oats 1 tsp cinnamon 1 tsp vanilla extract 1/2 tsp salt 1/2 cup chocolate chips (if your a chocolate lover like me!) - or use raisins, shredded coconut, or nuts! Makes 14 - 16 cookies. - Preheat oven to 350. - Mash bananas until smooth, then mix with almond butter. - Add all other ingredients and mix well. - Scoop cookie dough onto a greased or lined baking sheet. - Bake for 15 minutes. - Devour! You will love these ones - I think they are my favorite of the dessert recipes thus far! I just LOVE sweets, so I'm constantly trying out different recipes and combinations, and thinking of how I can make delicious desserts more healthy, so I can eat them freely and happily!

I can't cook. I can't bake. My girlfriend gave me a timer one year for my birthday; I use it for the laundry. So, it's an unusually warm day in L.A. in November (92) and I'm preheating the oven. lol. I lined the pan with coconut oil I had two mushy bannanas. What to do? I did a search for bananas, oats (the staple of a good cookie); and almond butter. Who knew? I just finished my last piece of chocolate but did have the 1/2 cup coconut, spices and viola! Now mind you, my almond butter was the chunky kind and I didn't have steel cut oats so I thought it would even itself out. They are drier than smooth butter would be but perfect with a glass of any variation of milk. The held together after baking and that surprised me. Yum!
