8/6/2013 Cumin-Lime Chicken with AvocadoHola amigas! Today's recipe is packed with flavor to help you spice up your Tuesday night dinner plans. It is also inspired by my true love - avocados. When my roomie came home (to our NEW apt which you may have noticed in the video!) with a beautiful avocado fresh off her parents' tree, I immediately reached for any ingredients that would compliment this giant avo and the chicken breasts that I had been meaning to make. Garlic, cilantro, cumin, lime and agave turned out to be just what we needed! Honestly, making chicken over and over can get pretty boring, so it's important to get creative with your marinades and flavors. It's also fun to plan a whole dinner around one ingredient - I knew I wanted to use Becca's avocado, so I just picked out everything that would be delicious with it! I'm tempted to join one of those farm-fresh veggie delivery services so I can just open my front door, see what veggies I received for the week, and plan out my cooking around my exciting new ingredients! Anywho, back to the cumin-lime chicken with avocado. It was zesty, easy peasy, and delicious, and here's how you can make it too . . . Ingredients
4 organic thin-sliced chicken breasts Juice of 1 lime 1 tbsp ground cumin 1 tsp extra virgin olive oil + a drizzle to heat on the stove 1 tbsp agave nectar 1 frozen garlic cube (or 1 clove) - Dorot brand found at TJ's or Ralphs 1 frozen cilantro cube - Dorot brand Salt & pepper to taste 1/2 avocado - sliced beautifully Marinate chicken in lime, cumin, olive oil, agave, salt, and pepper for about 30 minutes. Make sure chicken is evenly coated with the marinade on each side. Heat up some olive oil on a skillet, add 1 garlic cube and cilantro cube. Be careful not to burn yourself with the "jumping" pieces of garlic and cilantro. Combine cubes until they are no longer frozen and they are mixed together. Add your thin-sliced chicken breasts to the skillet at medium heat, and cook for a couple minutes on each side. Check with a knife to make sure chicken is cooked all the way through. Remove from stove and top with perfect slices of avocado. YUM! Serve with quinoa or brown rice and some delicious grilled veggies. The farmers markets are exploding with amazing produce this summer, so get on that ASAP and whip up a deliciously fresh dinner! Happy Tues and have a great rest of your week!
