What could possibly bring on the holiday feels more than baking (and eating) chocolate peppermint cookies (while singing along to Mariah Carey All I Want For Christmas)? Speaking from experience, the answer is… nothing! These are the ultimate cookies of the holiday season and you’re going to LOVE them!
They can be made with just one bowl and only 7 ingredients, including a box of Simple Mills chocolate cake mix. That’s right, cake mix cookies. Doesn’t get much easier! I’m 100% down for using this boxed cake mix whenever I can. It’s the perfect little shortcut and unlike most cake mixes, this one is made with real ingredients that you can actually pronounce like almond flour, coconut sugar, and coconut flour. Talk about a perfect healthy swap! Here’s how to whip them up!

Ingredients
โ1 box Simple Mills Chocolate Muffin & Cake Mix
2 eggs
1 tbsp vanilla extract
6 tbsp melted coconut oil
1/2 cup chocolate chunks or chips (I used this bar and chopped it into chunks)
3 candy canes, smashed into crumbles – it should measure roughly around 3 tbsp (I used these because they’re dye-free and don’t have corn syrup!)
Sprinkle of salt
Makes 16 cookies.
- Preheat the oven to 350ยฐF. Prepare a cookie sheet with parchment paper, then spray it with coconut oil spray.
- Crush candy canes and set aside. I put them in a ziplock bag and smashed them with a mallet (which is actually quite satisfying, ha!). Don’t over-smash them into dust – keep them somewhat chunky!
- Pour the cake mix into a large bowl. Then add the eggs, vanilla extract, and melted coconut oil and whisk until combined.
- Fold in chocolate chunks andย halfย of the crushed candy cane.ย
- Using a medium cookie scoop, scoop the cookies onto the prepared cookie sheet.
- Sprinkle the remaining crushed candy cane on top of the cookies, lightly pressing them into the cookie dough so they stick.
- Optional: sprinkle cookies with a pinch of flaky sea salt. Gottaย love that salty sweet!
- Bake for 10-12 minutes.
- Allow to cool before eating. Unlike most cookies which I prefer warm and melty, these are yummier once they’ve cooled! Enjoy!

Are these drool-worthy or what!? They’re rich and chocolatey (double the chocolate, double the fun, right!?) and perfectly soft & chewy with just the right amount of crunch from the candy canes. A total must for all of your upcoming holiday parties or cookie swaps! Do you guys do those? If so, I’m coming and bringing these!
Go pick up a couple boxes of the Simple Mills mix (or better yet, order on Amazon) because you’ll definitely want to make more than one batch of these! And while you’re at it, grab a box of the pizza dough mix and make this Artichoke Pesto Pizza! So delish!!
