12/5/2018 Chocolate Peppermint Cake Mix CookiesWhat could possibly bring on the holiday feels more than baking (and eating) chocolate peppermint cookies (while singing along to Mariah Carey All I Want For Christmas)? Speaking from experience, the answer is... nothing! These are the ultimate cookies of the holiday season and you're going to LOVE them! They can be made with just one bowl and only 7 ingredients, including a box of Simple Mills chocolate cake mix. That's right, cake mix cookies. Doesn't get much easier! I'm 100% down for using this boxed cake mix whenever I can. It's the perfect little shortcut and unlike most cake mixes, this one is made with real ingredients that you can actually pronounce like almond flour, coconut sugar, and coconut flour. Talk about a perfect healthy swap! Here's how to whip them up! Ingredients 1 box Simple Mills Chocolate Muffin & Cake Mix 2 eggs 1 tbsp vanilla extract 6 tbsp melted coconut oil 1/2 cup chocolate chunks or chips (I used this bar and chopped it into chunks) 3 candy canes, smashed into crumbles - it should measure roughly around 3 tbsp (I used these because they're dye-free and don't have corn syrup!) Sprinkle of salt Makes 16 cookies.
Are these drool-worthy or what!? They're rich and chocolatey (double the chocolate, double the fun, right!?) and perfectly soft & chewy with just the right amount of crunch from the candy canes. A total must for all of your upcoming holiday parties or cookie swaps! Do you guys do those? If so, I'm coming and bringing these! if I don't have enough time to order the simple mills cake mix -- do you think a normal chocolate cake mix would work as a replacement? obviously not quite as healthy!

I'm not sure if the consistency would be different since the Simple Mills mix is made with almond flour and regular cake mix would be more fine... let me know if you tried it! You can also grab the Simple Mills mix at Sprouts, Whole Foods, and Target if you don't have time to order online!
