Now that we’re fully in the swing of Fall, it’s time for some cozy recipes. When we’re craving cozy meals, usually that means hearty comfort food, which doesn’t always seem like the healthiest option. But don’t worry, this recipe will totally satisfy those carby cravings without knocking you off your healthy dinner routine. By the way, don’t you just love how cauliflower is the solution to making so many of our favorite indulgences so much healthier!? Seriously the most versatile veggie! If you haven’t tried Cauliflower “Mashed Potatoes” yet, get excited! You’ll totally fall in love with this side dish because it’s got that perfect creamy mashed potato consistency, but being that it’s made with cauliflower, it’s totally light and seriously guilt-free!


It’s super easy to make – you pretty much just steam it, put it in a food processor with some seasoning, and then enjoy! So simple. And it also stores really well, so it’s perfect when you’re hosting a dinner and want to make as many dishes in advance as you can. That makes me think about Thanksgiving, and these Cauli “Mashed Potatoes” would be a delicious addition to your Thanksgiving spread!

Cauliflower “Mashed Potatoes” (paleo, gluten-free, dairy-free)
Ingredients:
1 large head cauliflower, chopped into florets
3 cloves of garlic, peeled
2 tsp fresh thyme
2 tbsp extra-virgin olive oil
Salt and pepper to taste
1 tbsp. chives, chopped
Serves 3-4.
- Start by steaming the cauliflower and garlic. Fill a stockpot with one to two inches of water, place the steamer basket in the pot, and then throw the cauliflower florets and peeled garlic into the basket. Place a lid on the pot, and let it steam for 10 minutes or so until the cauliflower is tender.
- Drain the cauliflower and garlic, and then transfer everything into your food processor. Add the thyme, and season generously with salt and pepper.
- Turn on the food processor, and as it’s doing its thing, drizzle in 2 tablespoons of extra-virgin olive oil. Process until smooth.
- Taste and season again as necessary.
- Transfer to a bowl, and garnish with chopped chives and a drizzle of olive oil. Enjoy!

You know what the best part about this recipe is? If you eat the entire bowl, you should feel pretty good because you just polished off a whole lotta cauliflower (and you won’t feel the need to unbutton your pants like you would after eating way too many servings of mashed potatoes!).
