You know that feeling after you've been traveling or you're just out of your routine and all you want is to hit the reset button with a giant bowl of healthy veggies? Well this soup is the perfect way to do exactly that! My brother and sister-in-law, Justin and Bridget, have been traveling a ton lately and whenever they get home from their trips, they always make a huge pot of this soup that's loaded with every single veggie you can imagine. Every time they'd post it on their insta stories, I'd immediately crave it. It just looked like the most nourishing, healthy meal you could eat - the kind of thing I should probably be having at the end of my pregnancy (to offset the ice cream trips, ya know?). I asked them for the recipe, and while they'd say "oh it's a little of this and a lot of that and a bunch of giant handfuls of all the greens you can find", I tried to narrow it down into a more specific recipe because I know it's exactly the type of meal so many of us crave to get back on track! So hopefully I'm doing J & B's soup justice and that it makes you feel super healthy and fab whenever you whip it up!
As I'm approaching my due date (10 day countdown!), I keep thinking... I should make some delicious snacks that will be filling and satisfying when the baby is here and just freeze them so I have them on hand! Then I make them, and two days later, I realize I ate them all before I had a chance to even freeze them. That's exactly what happened with these banana protein muffins, oops! They're just too good, they never stood a chance of making it to the freezer! What I love about these is that they're packed with some extra goodies that make them more filling than your usual banana muffins, like flaxseed for fiber and collagen for protein, but they still taste like a decadent treat! Best of both worlds.

When was the last time you had chicken alfredo? I don't think I've had that decadent dish since my high school days! It always felt like a tough recipe to makeover into something healthy and believe me, I tried, but cauliflower-alfredo sauce just didn't seem to do the trick. But I'm very excited to say that my alfredo days officially are back, because I found a dairy-free sauce that is made with the healthiest, most simple ingredients, and I'm going to pour it on everything! Starting with this spaghetti squash, which is stuffed with onions, garlic, chicken breast, kale, and the alfredo of course! Say hello to your new favorite weeknight dinner!
When it comes to a quick & easy dinner, you really can't beat a sheet-pan meal where you throw everything together on one pan, add some flavor and seasoning, toss it in the oven, and 15 minutes later, dinner is served! Sheet-pan meals work perfectly with fish and veggies, so this usually ends up being my go-to Sunday or Monday night dinner when I'm craving something fresh, healthy, and flavorful after the weekend and don't want to spend all night in the kitchen. Not only is the prep and a breeze, but so is the cleanup! Ideal! When it comes to a healthy and delicious sheet-pan dinner, my favorite combo is definitely salmon and baby broccoli, AKA broccolette. The two pair so well together typically cook to perfection right at the same time, so it works out really well!
I've definitely been postponing Fall as long as I could this year. Maybe it had to do with being 9 months pregnant when it was still 90 degrees out that made me want to hang on to summery peach salads and popsicles for a little while longer. But considering it's officially October 1st, there are pumpkins everywhere I look, and the temperature has (thankfully!) dropped a couple degrees, I think it's finally time to get in the cozy Fall spirit! And what better way to do that than with a big bowl of Sweet Potato Turkey Chili!? This recipe is so hearty, satisfying, and delicious - total comfort food in the healthiest way possible! It's paleo, gluten-free, dairy-free (unless you add cheese / garnish with Greek yogurt), and going to be one of your favorite Fall recipes!
