3/11/2014 Shaved Brussels Sprout, Kale & Pomegranate SaladIt's WeekNight Bite Wednesday, and I have a fabulous recipe to share with you that I know you will just love! This Shaved Brussels Sprouts, Kale, and Pomegranate salad has become my new go-to dinner. Whenever I make it, I'll do a huge serving so I have enough to pack for my lunch the next day, and it is even better after all the flavors have come together overnight. You don't need to worry about a soggy salad for lunch - this one is still super crispy and fresh! It's a jam-packed full of healthy ingredients, tons of texture, and a whole bunch of flavor. I got inspired to create this salad when I saw a new blend of lettuces at Trader Joe's called the "Cruciferous Crunch Collection" - not an easy or pretty name, but the blend of chopped kale, shaved brussels sprouts, purple cabbage, and green cabbage definitely intrigued me. Now here's the key to making this salad a success: just like I did with THIS kale salad recipe, you have to give the greens some lovin' and MASSAGE them until they became a bit softer, nicer, and happier. This will take all the coarseness and bitterness out of the brussels and the kale, so it's very important!

3/5/2014 Zucchini Quinoa Fritters (Gluten Free!)Get ready . . . these Gluten-FREE, healthy green fritters will blow your mind. The recipe yields 7 medium-sized fritters, and . . . well . . . we polished them off in one day! I was hoping to pack one or two for my lunch the next day, but they went way too quickly! Needless to say, Zucchini Quinoa Fritters will definitely be a new staple in our house! They're crunchy on the outside, soft and chewy on the inside, and packed with tons of nutritious and hearty ingredients. Each fritter is loaded with shredded zucchini which is about as low-cal as it gets, plus it's a Vitamin C and nutrient powerhouse! The added quinoa is amazing because it provides protein and fiber, and it's gluten-free! I figured I may as well sneak in some ground flaxseeds too for a boost of healthy fats. Once we have those fab, healthy ingredients, we just need to add in the lemon, thyme, and Parmesan for some extra deliciousness and garnish with my Honey Lemon Yogurt Sauce! Whip up these fritters and you're all set for a perfect brunch side-dish or a snack! I can't wait to make these for my next Sunday brunch with the ladies. I know they'll be a huge hit!
1/1/2014 New Years Eve Pizza PartyHappy New Year to my wonderful WeekNight Bite readers! All my love and best wishes to you all for an amazing 2014! We decided instead of dealing with overpriced pre-fixed restaurant menus last night, we'd host our own New Years Eve dinner party. Best decision ever! On the menu: spinach and kale bites, hummus and crackers, Lentil Bruschetta Dip, HOMEMADE PIZZAS (!!!), Arugula Pesto Salad, Sugar Spiced Salmon, Grilled Dijon Balsamic Chicken, and my friend Gaby's Chocolate Butterscotch Blondies. It was ridiculously good. The most fun part of the night was the pizza making (using our brand new pizza stone). And we captured it all on video. This isn't your usual polished WeekNight Bite video. Nope, we got some noisy boys in the background watching football, fire alarms going off thanks to the burning cornmeal on the pizza stone, lots of chaos, and lots of fun. We had the best night and I'm excited to share it with you right here! Plus your getting my super easy recipe for this delicious mushroom pizza and you're going to have the best time making it and hosting your own pizza party! 12/4/2013 Roasted Garlic Hummus'Tis the season for entertaining, and one of my favorite appetizers or snacks to make for a party is this Roasted Garlic Hummus. It's a perfect potluck addition because it's a delicious, healthy option to add to a table of often indulgent dishes. I like to serve it with veggies, pita bread, and chips, or I make it into a meal with grilled chicken and veg kabobs. This recipe is the perfect basic hummus with a hint of roasted garlic, so you can feel free to add any spices or creative twists to it that you'd like . . . it's easy to get inspired with Cooking Light's 12 ways to make hummus! Throw some rosemary in there or some roasted red peppers or even switch it up with black beans or edamame. There's so much you can do to make hummus exciting. I personally, kept it simple with some roasted pine nuts on top and a little drizzle of olive oil, and of course that punch of roasted garlic really makes a delicious difference!
I made a big batch of this so I'd be totally set with a healthy snack waiting for me in my fridge. I don't know about you, but I feel like I've been celebrating for the last 3 months and eating like every day is my birthday. Is it just me? Maybe. Getting engaged, followed by my sister's birthday, my birthday, my mom's, several weddings, my engagement party, Thanksgiving, and then Hanukkah . . . woah . . . all this celebrating has been super fun, but it's definitely not kind to the waistline! SO, my latest thing is having healthy snacks on hand, and preparing myself for light and clean eating! Hummus is super easy to make at home. I love making it in my mini food processor but you can easily whip it up in a blender too, and it's ready to go within a few minutes. And you only need a couple ingredients to make it happen, so roast up that garlic, grab a can of garbanzo beans, and get going on some healthy December snacking! 9/18/2013 Lentil Bruschetta DipIt's WeekNight Bite Wednesday! Today I'm taking a page out of Sandra Lee's book and sharing a semi-homemade appetizer with you . . . literally the EASIEST dip you will ever put together. It's 4 ingredients, takes about 3 minutes, and is seriously delicious. This is my go-to appetizer for potlucks with friends, especially when I'm in a rush. This Lentil Bruschetta Dip is amazing served with Ak-Mak Crackers, sliced veggies, pita chips, or on a toasted baguette. By the way friends, it's bru-SKET-ta, not bru-shet-ta. In LA, I don't think you can go wrong with either pronunciation, BUT I'll warn you from personal experience, don't say the second one in Italy unless you want to get a serious eye-roll from the waitress. Ok good, now back to the dip . . . the recipe makes a large amount - enough for 10 - but if you want to make it just for yourself and keep it to snack on throughout the week, the flavors will continue to blend together, and it is just as yummy a couple days later! You ready for this flavorful Italian appetizer? Here we go . . . Ingredients 1 package (2 1/2 cups) Trader Joe's Steamed Lentils - or cook your own lentils and allow them to cool before putting together the rest of the ingredients. 1/2 package Trader Joe's Fresh Bruschetta Sauce - drained of some oil first 1/2 cup freshly shaved Parmesan cheese 1/4 cup Italian flat-leaf parsley - finely chopped Salt & pep to taste I only have one instruction for you - Mix it all together and enjoy! :) Last thing, if you haven't done so already, make sure you follow WeekNight Bite on Bloglovin' to get notified on all my blog updates! :)
