10/4/2016 Broccoli Rice Chicken Taco BowlsMy go-to dinner? It's nothing fancy or elaborate. When it's not a dinner from our Sun Basket meal delivery, it's got to be something healthy and quick . . . I'm talking 20 mins or less. Enter these taco bowls. We all know the glory of cauliflower rice, but how about broccoli rice? It's a fun and colorful way to change up your taco bowls and it only takes a few minutes to whip up! When I want to get in and out of the kitchen quick, broccoli rice and rotisserie chicken are my lifesavers. (I always buy the organic, "naked" rotisserie chicken from Whole Foods). Aside from that, all you need are your favorite add-ins - avocado & salsa are no-brainers, add some black beans, sautéed peppers and onions, shredded cheese, cilantro, and a squeeze of lime, and dinner is served! Ingredients For the Broccoli Rice: 1 bag of Trader Joe's Riced Broccoli (or 1 head of broccoli, pulsed through food processor) 1 tbsp extra virgin olive oil 2 cloves garlic, chopped 1/2 cup salsa verde 1/2 red onion, diced Salt & pepper to taste For the bowls: Organic rotisserie chicken, shredded 2 tbsp of your favorite salsa 1/2 tsp chili powder 1 can black beans, drained and rinsed 1 red or yellow bell pepper, sliced into strips 1/2 red onion, thinly sliced 1 tbsp extra virgin olive oil Freshly shredded monterey jack cheese Avocado, fresh cilantro, extra salsa & lime juice for garnish Salt & pepper to taste Serves 3-4. 1. Heat olive oil in a pot until hot but not smoking. Add chopped onion and garlic and sauté a few minutes until fragrant. 2. Add riced broccoli and salsa verde and mix well. Season with salt and pepper. Sauté until heated through. Divide into bowls. 3. In the same pan, heat olive oil, and sauté bell pepper and onions. Add to broccoli rice. 4. Mix shredded chicken with salsa and chili powder for some extra flavor. Add to broccoli rice. 5. Add black beans, shredded cheese, avocado, and cilantro. Squeeze lime juice and serve with extra lime wedges. Delish right? I am doing the 5 day detox and made this salad for dinner tonight. It was so easy and so delicious. This will become a fun cottage lunch when I have all my family home. The only change I made was substituted chicken breasts that I marinated and cooked as I had them on hand for another recipe. Enjoying the recipes for the detox and they so far will all be made again.
