They're three of my favorite foods, and combined all together, they're pudding perfection! Banana & chocolate is a no-brainer in my opinion, and if you're skeptical about the avocado, just trust me when I tell ya that the cacao powder completely cuts the flavor and makes it so chocolatey and delicious. Other pros about this recipe - minimal clean-up, dairy-free, and full of nutrients and antioxidants. Honestly, what's not to love about chocolate pudding?! This 6-ingredient recipe takes about five minutes to whip up and it's an amazing, guilt-free way to satisfy your most demanding sweet tooth. Speaking of that sweet tooth, does anyone else get crazy cravings for sweets everyday around 3pm? It's like clockwork for me. It can be easy to reach for the wrong choices, but a handful of those old easter candies won't do you any favors. They'll send your blood sugar skyrocketing, giving you a quick burst of energy followed by an even quicker crash, which makes the rest of the workday feel like an eternity. Add this pudding to your Sunday meal prep list, because it's the perfect thing to pack to satisfy that sweet tooth at work. It will stabilize your blood sugar curve thanks to the healthy fats, fiber, and protein packed into this sweet treat! Here's how to make it: Banana Avocado Chocolate Pudding Inspired by Shutterbean Serving: yields 3 mini ramekins Ingredients 1 1/2 banana 1/2 medium avocado 1/4 cup cacao powder 2 tbsp maple syrup or honey 1 tsp vanilla extract 1 pinch of sea salt Optional toppings: coconut whipped cream, 1/2 sliced banana, cacao nibs, sea salt, chocolate chips, fruit, chopped nuts Instructions 1. Combine banana, avocado, and cocoa powder in a food processor and whirl it up until smooth. 2. Add remaining ingredients. Mix it up once more until perfectly smooth. 3. Divide pudding into ramekins. Refrigerate for 30 minutes to get it nice and cold... or don't, if you just can't wait. 4. Adding whipped coconut cream or other toppings, if desired. Who says desserts can't be good for you!? Enjoy! I must say, I was a little confused adding avocado to yummy banana and chocolate, but now I see the avo makes the mixture creamy. My mouth is actually watering for this sweet treat. Can't wait to try it Lindsay! XOX
