I craaavvve this salad all the time! It is so flavorful, light, and healthy. The pesto dressing gives it an Italian twist, and with so few ingredients, it is the easiest salad to throw together!
3 big handfuls of arugula
1/2 can cannellini beans
2 raw zucchinis - chopped in quarters
1/4 cup toasted pine nuts
1/4 cup shaved parmesan cheese
1/4 cup extra virgin olive oil
1 Trader Joe's frozen garlic cube (or 1 fresh clove)
1 Trader Joe's frozen basil cube (or 1 tsp fresh chopped basil)
Juice from 1/2 a lemon
Pinch of salt to taste
Serves 2-3 as a side salad.
