4/13/2022 5 Passover-Friendly Dessert RecipesPassover is just a couple days away, which means it's the start of seven full days without any leavened bread products. That means no bread, no traditional baked goods, no pasta, no crackers, no cereal... you get the idea. This is symbolic of when the Jews escaped Egypt and didn't have time to let the bread rise before racing out of there... hence why we skip leavened bread and why matzah is everyone's go-to over Passover! But honestly, matzah just isn't my thing... especially when there are so many more delicious things that we can eat during Passover! With all of the incredible paleo desserts out there that are already grain-free, it's pretty easy to find Passover-friendly recipes. Here are 5 of my all-time favorites to keep your sweet tooth satisfied during Passover (and honestly, all year round!). Paleo Chocolate Chip CookiesMy all-time favorite chocolate chip cookies!! I always have these stocked up in my freezer so that when my sweet tooth comes calling, I can heat one or two up and eat them while they're nice and melty and gooey - highly recommend! Mini Strawberry TartsThere always seems to be a lot of chocolately treats at my family's Passover seder, so it's nice to mix it up with something a little fruity. Plus I love that these are mini for easy portion control! Paleo Chocolate Chip BlondiesMy mother-in-law requests that I bring these to her seder every year, and even with an entire kitchen island full of desserts, these always get polished off immediately! Coconut Cupcakes with Coconut "Buttercream" FrostingThese cupcakes start with a box of Simple Mills Cake Mix, so it really doesn't get much easier! They're super coconutty and topped with a 4-ingredient frosting that's made with coconut butter so it's totally dairy-free, but tastes like buttercream! Coconut MacaroonsGotta love these little two-bite macaroons. You can dip the bottoms of the macaroons in melted chocolate for a little extra sweetness or just drizzle the chocolate right over the top. I love topping mine with a sprinkle of salt - can't beat the salty sweet combo!
