Today I'm sharing one of my favorite weeknight meals - this one is perfect for those days when you want to get in and out of the kitchen quickly and you're craving a big bowl of something super healthy. This gluten-free, vegetarian stir-fry is full of all the good stuff: tofu, quinoa, veggies, and my favorite yellow curry sauce. It's a meal that leaves you full, satisfied, and happy, knowing that you are eating right and feeding your body clean & healthy ingredients! All that, and it tastes amazing too!
As I write this post, I am daydreaming about making this Tofu Curry Stirfry as soon as I get back to LA and have the luxury of a Trader Joe's nearby and a fully stocked kitchen where I can cook! Until then . . . I'll continue discovering Firenze's fabulous restaurants, and I'll enjoy every bite of the deliziosa pizza, pasta, gelato, and paninis, washed down with a nice big glass
of Chianti, of course.
1 tbsp coconut oil
1 1/2 cups extra-firm tofu, cut into cubes (my favorite
is Trader Joe's Savory Baked Tofu)
1 bag (about 3 cups) cauliflower, broccoli, and carrot medley
1/3 cup water
1/2 cup Trader Joe's Thai Yellow Curry Sauce (or any
brand of healthy yellow curry sauce!)
1 1/2 cup cooked quinoa
Sprinkle of cinnamon
Salt & pepper to taste
Heat coconut oil on your skillet. Add veggies and tofu to skillet with 1/4 cup water (to speed up the cooking process). After a few minutes, once veggies are vibrant and have cooked through a bit, add Curry Sauce and a sprinkle of cinnamon. Mix to coat veggies and tofu evenly. Lower to a simmer and cover with a lid for about 2-3 minutes. Last, add (pre-cooked) quinoa and mix together. Once quinoa is heated through, serve and enjoy this healthy goodness! How simple and delish is that!?
