1/29/2014 Super Bowl Snack: Crunchy Thyme Roasted ChickpeasLet's face it, Super Bowl snacks are typically super unhealthy, cheesy, and greasy. But I'll admit it, they're also usually pretty delicious. Well, I set out to make a snack that's healthy AND satisfies your salty, crunchy cravings. Enter these Crunchy Roasted Chickpeas. I'm warning you - they're pretty addicting, so bring them to a party and share with your friends! This is the easiest snack to prepare - it only takes a few ingredients and about 30 minutes total. What's great about these crunchy cuties is that you can make them a bunch of different ways - you can make them spicy, sweet, or savory. I roasted mine with a little olive oil, thyme, salt, and pepper, and they were just perfection. Next time, I'm trying them out with a little cinnamon and stevia to cure my need for a mini sweet snack. Here's my trick for the perfect roasted chickpeas. Rinse and rain your chickpeas and make sure to dry them completely. Any moisture will get in the way of delicious crunchiness. Here's all you need to make this Super Bowl snackie: Ingredients 1 (15-ounce) can garbanzo beans - rinsed and drained 1 tbsp extra virgin olive oil Pinch of thyme Salt and pepper to taste
