1/18/2013 Magic Oil - a cooking secret!When I took my cooking class at Los Tamarindos, I learned an amazing little secret that I will use for the rest of my cooking life! And guess what, so will you! Instead of cooking everything with standard, plain cooking oils, we used what the chef called "Magic Oil". What is this mystery magic oil? WELL, it is a combination of olive oil and grapeseed oil, tons of fresh herbs, and garlic. Why the mix of oils? Some oils, like olive oil, break down at high heat and can release toxins. Grapeseed oil has a much higher burn-point, so mix the two, and you'll be able to cook healthily at higher heat! In the magic oil, you can use ANY herbs you want. All those leftover herbs that you end up tossing out because you don't have much left or they're going to expire . . . throw them into your jar of oil and use the magic mixture each time you're cooking dinner! The flavors release over time, so the longer you have your jar of oil, the more flavorful it gets! No need to refrigerate - store it at room temp, the same way you store olive oil - and continue to add to it over time! Ingredients
Equal parts extra virgin olive oil & grapeseed oil Whatever herbs you have on hand! I used fresh dill, rosemary, oregano, and basil - chopped Fresh garlic - chopped Add ingredients into a cute mason jar. Mine is 1/2 Liter and I used about a half-head of garlic and 3/4 cup chopped herbs. Adjust based on the size of your jar. Add all your chopped herbs and garlic into the jar, then pour the oils in to fill to the top. Mix it up and prepare yourself for some deeeliciously flavorful meals! If you have a favorite herb, feel free customize your oil and use what you like best! Other herb ideas - italian flat-leaf parsley, thyme, sage. Use this mixture for everything - marinading and cooking chicken, fish, or steak, roasting veggies, tossing it in with your whole-wheat pasta, or as a salad dressing or dip for breads . . . the list goes on!

Lindsay-le, usually I start my cooking for Passover with cakes for the whole family, meaning Lucy and Brenda but this year I am beginning Passover with the MAGIC OIL so I am prepared for all the other things that are not cakes and sweets. Thanks so much for the secret.
