Today's recipe is super flavorful, easy, and is the perfect quick protein to add to salads, serve with soup, or chop up for lettuce wraps. It was so much fun filming again with Sarah of The Crohn's Jouney Foundation, and her Ginger Garlic Chicken Patties (like all of her recipes) use only ingredients that are sensitive on the stomach and have multiple health benefits!
Here's how . . .
Yields about 8-10 small patties - feel free to form larger patties!
1 pound package organic ground chicken
1 tsp ground fresh ginger
3-4 crushed garlic cloves
Zest from 1/2 lemon
1 tsp salt, or to taste
Cracked pepper to taste
Coconut oil cooking spray (or 2 tsp coconut oil)
1. Mix all ingredients well with your hands, except coconut oil. Make sure the garlic, ginger, and lemon zest are evenly distributed
throughout ground chicken.
2. Form your chicken patties. I made them somewhat small and ate 3 for dinner with a bunch of veggies. Make them as large as you'd like, but the small ones are nice because they cook really quickly!
3. Grill 'em! Mine cooked in less than 4 minutes on each side. Cut into the middle to see if they are ready.
