11/18/2016 Fall Harvest SaladWho's ready for Thanksgiving? It's my favorite holiday of the year and I am so excited that it's just around the corner. Cooking for Thanksgiving can be an overwhelming task, so I'm making your salad as easy as possible! The colors and flavors in this salad are absolutely perfect for fall and all of your upcoming festivities. If you haven't bought any persimmons yet this season, time to get on board. I keep trying to come up with more ways to eat persimmons because I love them so much and the season will be over before we know it. I've been putting them in every salad possible and the other day I threw one in my smoothie with a sprinkle of cinnamon . . . so gooood. So back to this Fall salad - the great thing about a kale salad is that you can make it ahead of time and you don't have to worry about the kale getting overly soggy. Makes it nice and easy when you have 100 other things to cook for the holidays! Ingredients 1 large bunch of lacinato kale, de-stemmed and chopped finely 1 fuyu persimmon, thinly sliced 1 apple, thinly sliced 1/4 cup pomegranate seeds 1/3 cup candied walnuts (or your favorite nuts) Sprinkle of dried cranberries or golden raisins For the Orange Vinaigrette: 2 tbsp orange juice 3 tbsp extra virgin olive oil 1 tsp dijon mustard 1 tsp honey 1 tsp white wine vinegar Salt & pepper to taste So festive right? I'll definitely be making this for our huge group of 23 family members next week!
