You'll LOVE this Coconut Vanilla Chia Pudding. It's sweetened with stevia, packed with protein, and topped off with antioxidant-rich berries. My favorite ingredient is the fresh vanilla bean - it is just magical and gives the pudding a gourmet twist, and makes me feel a little fancy every time I use it in a recipe! What's extra fab about this recipe is that it literally takes 5 minutes to prepare, then you just put it in the fridge, go run some errands, workout, do something productive, and come back and your pudding is ready to go. Another option is to pop it in the fridge overnight and you don't even have to think about it. Then you can assemble it into fruit parfaits whenever you feel like it.
1 cup unsweetened vanilla almond milk
1/2 cup light coconut milk (it comes in a can)
1/4 cup chia seeds
1 vanilla bean (or 1/2 tsp vanilla extract)
2 tbsp shredded coconut
A drizzle of honey
All of your favorite berries
Makes 3 medium mason jar parfaits.
All you have to do is mix all the ingredients together in a bowl or glass. Stir well until everything is evenly combined. Cover with saran wrap and refrigerate for 3 hours (or overnight!). Assemble your mason jars or wine glasses with berries on the bottom, then a few spoonfuls of pudding, more berries, more pudding . . . you get the point. Garnish with berries on top and toasted coconut flakes or Trader Joe's Roasted Coconut Chips (YUM!). Drizzle with honey and serve to all your friends at your 4th of July partay!
