2/26/2014 Cinnamon Glazed Almonds & Hazelnuts (sugar-free!)To some of you, this may not be a huge accomplishment, but I'm VERY proud to report that I've officially gone two weeks without eating dessert. For a girl who grabs a handful of chocolate chips every time she walks by the freezer, two weeks without chocolate, cookies, or baked goods is pretty major. I've always had a serious sweet tooth, and even though I make an effort to eat really healthy meals and snacks, I always leave room for some delicious treats. Lately, this habit of mine has gotten a little crazy, so two weeks ago (after Becca and I scarfed some chocolate chips without even thinking about it), we made a deal with each other that we'd go THREE WHOLE WEEKS without dessert. Neither of us will dare cheat our way through this deal, especially since we have a calendar taped on the fridge where we check off our dessert-free days. If either of us screwed up during our dessert detox, it would say it right there on the fridge and remind us of our total lack of self control. So yes, absolutely no cheating during these three weeks. Our hope is that we'll have broken our daily dessert habit by the end of this, and moving forward we'll have more control when it comes to our sweet cravings. We'll see how it goes . . . stay tuned. But in the meantime with one week left of our challenge, I'm racking my brain for recipes that I can whip up quickly, that are sugar-free, healthy, and satisfying enough for my demanding sweet tooth. SO . . . You know those candied, cinnamon-glazed nuts that they have at fairs, farmers markets, and football games? The ones that smell amazing when you walk by them? I LOVE those. They're so freaking good. I mean, how could they not be good when they're coated in oil, sugar, brown sugar, and cinnamon? Mmmmm. I decided to make my own version, without the sugar or oil, but still delicious, crunchy, and sweet. Using just egg white, stevia, vanilla, cinnamon, and salt, my hazelnuts and almonds turned out perfectly. If you're looking for healthy, sugar-free and guilt-free sweet, these Cinnamon Glazed Nuts are your new bestie. Here's how to make them: Ingredients 1 cup raw almonds 1 cup raw hazelnuts (or any other nuts that you love! I'm trying pecans next time) 1 egg white 4 packets Stevia 1 1/2 tsp cinnamon 1/4 tsp salt 1/2 tsp vanilla extract

1/29/2014 Super Bowl Snack: Crunchy Thyme Roasted ChickpeasLet's face it, Super Bowl snacks are typically super unhealthy, cheesy, and greasy. But I'll admit it, they're also usually pretty delicious. Well, I set out to make a snack that's healthy AND satisfies your salty, crunchy cravings. Enter these Crunchy Roasted Chickpeas. I'm warning you - they're pretty addicting, so bring them to a party and share with your friends! This is the easiest snack to prepare - it only takes a few ingredients and about 30 minutes total. What's great about these crunchy cuties is that you can make them a bunch of different ways - you can make them spicy, sweet, or savory. I roasted mine with a little olive oil, thyme, salt, and pepper, and they were just perfection. Next time, I'm trying them out with a little cinnamon and stevia to cure my need for a mini sweet snack. Here's my trick for the perfect roasted chickpeas. Rinse and rain your chickpeas and make sure to dry them completely. Any moisture will get in the way of delicious crunchiness.
Here's all you need to make this Super Bowl snackie: 12/4/2013 Roasted Garlic Hummus'Tis the season for entertaining, and one of my favorite appetizers or snacks to make for a party is this Roasted Garlic Hummus. It's a perfect potluck addition because it's a delicious, healthy option to add to a table of often indulgent dishes. I like to serve it with veggies, pita bread, and chips, or I make it into a meal with grilled chicken and veg kabobs. This recipe is the perfect basic hummus with a hint of roasted garlic, so you can feel free to add any spices or creative twists to it that you'd like . . . it's easy to get inspired with Cooking Light's 12 ways to make hummus! Throw some rosemary in there or some roasted red peppers or even switch it up with black beans or edamame. There's so much you can do to make hummus exciting. I personally, kept it simple with some roasted pine nuts on top and a little drizzle of olive oil, and of course that punch of roasted garlic really makes a delicious difference!
I made a big batch of this so I'd be totally set with a healthy snack waiting for me in my fridge. I don't know about you, but I feel like I've been celebrating for the last 3 months and eating like every day is my birthday. Is it just me? Maybe. Getting engaged, followed by my sister's birthday, my birthday, my mom's, several weddings, my engagement party, Thanksgiving, and then Hanukkah . . . woah . . . all this celebrating has been super fun, but it's definitely not kind to the waistline! SO, my latest thing is having healthy snacks on hand, and preparing myself for light and clean eating! Hummus is super easy to make at home. I love making it in my mini food processor but you can easily whip it up in a blender too, and it's ready to go within a few minutes. And you only need a couple ingredients to make it happen, so roast up that garlic, grab a can of garbanzo beans, and get going on some healthy December snacking! 9/18/2013 Lentil Bruschetta DipIt's WeekNight Bite Wednesday! Today I'm taking a page out of Sandra Lee's book and sharing a semi-homemade appetizer with you . . . literally the EASIEST dip you will ever put together. It's 4 ingredients, takes about 3 minutes, and is seriously delicious. This is my go-to appetizer for potlucks with friends, especially when I'm in a rush. This Lentil Bruschetta Dip is amazing served with Ak-Mak Crackers, sliced veggies, pita chips, or on a toasted baguette. By the way friends, it's bru-SKET-ta, not bru-shet-ta. In LA, I don't think you can go wrong with either pronunciation, BUT I'll warn you from personal experience, don't say the second one in Italy unless you want to get a serious eye-roll from the waitress. Ok good, now back to the dip . . . the recipe makes a large amount - enough for 10 - but if you want to make it just for yourself and keep it to snack on throughout the week, the flavors will continue to blend together, and it is just as yummy a couple days later! You ready for this flavorful Italian appetizer? Here we go . . . Ingredients 1 package (2 1/2 cups) Trader Joe's Steamed Lentils - or cook your own lentils and allow them to cool before putting together the rest of the ingredients. 1/2 package Trader Joe's Fresh Bruschetta Sauce - drained of some oil first 1/2 cup freshly shaved Parmesan cheese 1/4 cup Italian flat-leaf parsley - finely chopped Salt & pep to taste I only have one instruction for you - Mix it all together and enjoy! :) Last thing, if you haven't done so already, make sure you follow WeekNight Bite on Bloglovin' to get notified on all my blog updates! :)
