3 big handfuls of arugula
1/2 can cannellini beans
2 raw zucchinis - chopped in quarters
1/4 cup toasted pine nuts
1/4 cup shaved parmesan cheese
1/4 cup extra virgin olive oil
1 Trader Joe's frozen garlic cube (or 1 fresh clove)
1 Trader Joe's frozen basil cube (or 1 tsp fresh chopped basil)
Juice from 1/2 a lemon
Pinch of salt to taste
Serves 2-3 as a side salad.
