1/8/2013 Arugula Pesto SaladI craaavvve this salad all the time! It is so flavorful, light, and healthy. The pesto dressing gives it an Italian twist, and with so few ingredients, it is the easiest salad to throw together!
Ingredients 3 big handfuls of arugula 1/2 can cannellini beans 2 raw zucchinis - chopped in quarters 1/4 cup toasted pine nuts 1/4 cup shaved parmesan cheese Dressing: 1/4 cup extra virgin olive oil 1 Trader Joe's frozen garlic cube (or 1 fresh clove) 1 Trader Joe's frozen basil cube (or 1 tsp fresh chopped basil) Juice from 1/2 a lemon Pinch of salt to taste Serves 2-3 as a side salad. OMG Aqua al 2 is my FAVORITE restaurant in San Diego...I've been to the one in Florence as well, and it's just as divine! How fun that you've been too and loved it as much as I do!

Yes! their pasta is tooooooooo good. My brother and I shared the 5 courses of pasta specialty, and it was just heaven!
