During my European adventure, I spent a lot of time living freely and really letting myself indulge in all the amazing cuisine. Who would ever want to miss out on all the delicious pasta and gelato in Florence!? I sure didn't! But now that I'm home, I'm ready to detox my body and get in tip-top, fit, fabulous shape. And after 6 weeks of travel expenses, I need to do it in an affordable way. So instead of signing up for a juice cleanse, I started looking for ideas on how to detox with clean, whole, nutritious foods that would leave me feeling refreshed and rejuvenated.
So here's how we do it:
Breakfast Quinoa with Prunes
Makes 1 serving
1/2 cup quinoa, rinsed
1 cup water
1 pinch nutmeg
1 tsp grated ginger
1 tbsp flax seed oil
1/3 cup chopped prunes
1/4 cup rice milk - I'll probably use almond milk because
I like the taste better!
In a small pot, stir 1/2 cup quinoa, a pinch of nutmeg and 1 tsp of grated ginger into a cup of water. Bring to a boil. Reduce the heat, cover the pot and simmer for 10 minutes. Stir in the prunes and rice milk. Cover again and cook another 5 minutes. Before serving, stir in 1 tbsp of flaxseed oil.
Kale, Pineapple, and Ginger Juice
Pineapple, Lemon, & Pomegranate Drink - no juicer required!
A celery, radish, cucumber, green bean salad with an olive oil & lemon dressing. I'm may just buy my favorite Trader Joe's Healthy 8 Chopped Veggie Mix and add the dressing to it - faster and easier!
Note: You can have as many of these snacks throughout the two
days as your heart desires!
Yummy Fruit Smoothie - almost my exact WNB smoothie!
Makes 1 serving
1/2 cup unsweetened almond or hemp milk
1 tbsp ground flaxseed or chia
1/4 cup frozen blueberries
1/2 cup ice
Blend until smooth!
Makes 5 servings!
2 chopped red onions
2 chopped celery stalks
1 fennel bulb, fronds and stalks included, roughly chopped
2 tsp caraway seeds
2 tsp sea salt
Freshly ground pepper
1 cup sliced shitake mushrooms
4 chopped garlic cloves
1 cabbage, roughly chopped
2 quarts water
2 tbsp paprika
2 tbsp chopped fresh oregano
1/2 cup chopped parsley
Combine all ingredients, except for the chopped parsley, in a pot. Add 2 quarts of water. Bring to a boil and then reduce heat. Simmer covered for about 1 hour. Adjust seasoning. Serve topped with some
freshly chopped parsley.
Take this shopping list with you to make life easier!
- Drink TONS of water! And I mean tons - as in, your body weight in fluid ounces of water!
- Start your morning with hot water, lemon, and 1 tbsp apple cider vinegar - this is amazing for alkalizing your body! I try to do this every single day, not just when I'm cleansing!
Good luck and let me know if you choose to do this healthy 48-hour rejuvenation with me :). Post your pics, tweet it, and tag WeekNight Bite! :)
Hope you have an amazing weekend!
