4th of July is the perfect occasion to enjoy the juicy fruits that are in season this summer, so I just had to share this fresh and healthy, skinny treat. This will totally cure your sweet tooth and leave you feeling light and guilt-free! I learned how to make this dessert in an amazing healthy cooking class in LA called Eatz, and I LOVED it! The combination of vanilla, honey, and ricotta is so delicious, topped with fresh berries and a sweet balsamic glaze is just summer-perfection. The finishing touch basil on top brings the whole dessert up a notch and adds a ton of flavor. It's just an added bonus that this treat is red, white, and blue - a MUST for all of the celebrations this Thursday!
You ready for this skinny, delish dish? Here's how to make it . . .
1/2 cup half-skim ricotta cheese
1 tbsp honey
1/2 teaspoon vanilla extract
1 tbsp sugar
1/2 cup strawberries, sliced
1/4 cup fresh blueberries
1/2 tbsp fresh basil, chopped thinly (chiffonade)
Add ricotta, honey, and vanilla to your food processor and process until smooth. You can also just mix the ingredients well by hand. Transfer to a small bowl and refrigerate while you make the balsamic glaze.
In a small saucepan over low heat, bring the balsamic and sugar to a boil, and then immediately reduce the heat to a simmer. Stir occasionally and cover for 30 seconds-1 minute while simmering. Remove from heat and pour into a bowl to cool completely. Be careful not to overcook the balsamic - it can burn and get really thick and hard to drizzle (I made that mistake a few times!).
Divide the ricotta mixture between two pretty serving glasses. You can either do a spoonful of ricotta, then add the berries, balsamic, and basil, or you can layer each part like a parfait, as seen in the video!
